Staff at polling stations in Yirol East and Yirol West, Lakes State, decried the lack of food, saying the money allotted to their feeding has already run out.
Several polling station officers told Good News Radio that unless the question of food was addressed, work would not continue as normal.
Mr. Emmanuel Mading Lual of Atiapa Constituency said only Jesus was able to stay for a long time without eating because he was God.
The polling officials also cited lack of voter education, saying only very few people are aware of what to do, including the identification of party symbols.
Two polling stations in Yirol East had not received voting material by Tuesday afternoon, one of them being Aruop Nnyiel.
Other stations ran short of ballot papers and had to rush to nearby polling stations to borrow some while they waited for more ballots from the headquarters in Rumbek.
Polling officers also said that many voters are still in the cattle camps and the message of the two days extension has not reached them.
Yirol East has almost 70 thousand registered voters, the highest in Lakes state while Yirol West registered over 59 thousand voters.
